Dinner is Served

Hello

Thanks for popping in.

Over the last couple of years, since Mr CK had a few heart issues, we have made some changes to our diet in an attempt to become more healthy.  Our trips to Australia also helped to bring an inner healthiness to the fore as people are much more focussed on a healthy lifestyle than over here.  Things are changing though and there are much more options becoming available.

Here's a day in the life of my current diet to give you a taster!

I really enjoy my breakfast bowl of cereals every morning.  I mix everthing together daily as I get a good mix each day rather than preparing it for the week as by Sunday all I'd get would be the branflake dust!

Branflakes, oats, grape nuts, Waitrose mixed seeds, linseeds, pomegranate seeds, toasted almond flakes, Sainsburys chocolate drops, Skyr 0% fat strawberry yogurt, milk and red or black grapes followed up by a pot of herbal tea - licorice or peppermint.

Lunch is a couple of slices or sourdough bread or the low gluten brown bread from Lidls with Moroccan hummus plus a couple of mandarins or a banana.

Dinner today is a vegetarian chilli with turmeric rice.   This particular recipe uses carrots, celery, red pepper and walnuts  instead of beef mince together with kidney beans, tinned tomatoes, onions, garlic and chillies.  Spices used include cinnamon, cumin and smoked paprika together with salt and pepper and the pièce de resistance - a couple of cubes of dark chocolate!

Turmeric is just added to the rice as it is boiling with a pinch of salt.

At the weekend we treat ourselves to some Swedish Glace ice cream with a spoonful of strawberry yogurt or stewed apple.

Whilst on a regular basis we've given up meat including bacon, sausages, processed meat, butter, cheese, cakes, full fat yogurt and ice cream, we have been known to partake in a few cheese scones or yummy cakes now and then when the opportunity arises (as you might have noticed!)  and we'd also eat meat sometimes on holiday too.  We're just trying to cut down on all the non healthy/saturated fat options.

With Mr CK retired now, we're enjoying some of his delicious homemade soups too.  Maybe I'll let you have a look one day! 😊

Cheerio

  1. Sorry to hear about Mr CK heart issues. It is certainly a great menu and looks tasty. We are not quite there yet as we still eat meat but due to Gerards heart we are much healthier eaters.

    1. When something like that happens, it makes you reassess your lifestyle, doesn't it.

  3. I'm sure you are both benefitting from such a wonderful healthy diet. The chilli sounds very tasty. We don't eat meat at all but do eat fish occasionally, I love Swedish Glace and prefer it to dairy ice cream. It is good to have a treat occasionally - like a cheese scone:)

    1. There are so many different kinds of dairy ice cream but it's quite hard to find one with low saturated fat.

    1. It's very tasty and I just don't miss the meat anymore. I buy vegetables that are in season and that are grown in this country where possible too. x

  6. Oh, everything looks quite good! I like the breakfast cereal with all the yummy bits added in. I think the curry looks good, too. I'm trying to eat healthier - it does seem to be a process....xx Karen

    1. It's not so bad once you've decided what to eat and allow yourself a treat now and again. After a while you just don't want to eat lots of sweet things. x
